Phulka Roti

Ingredients
 
Serves 2

  • 1.5 cups of whole meal, white or gluten-free flour

  • 1.5 cups of water

  • Pinch of salt to taste

  • Oil to rub on tava / non-stick frying pan

Method
 

  1. In a bowl, whisk the flour, water and salt into a batter. Cover and leave for 5 minutes.

  2. Heat your tava or non-stick frying pan. Once heated, add a drop of oil, and then wipe the pan use a paper towel (this needs to be repeated for each roti).

  3. Add one small scoop of batter onto the tava. Keep the heat at medium-high.

  4. Once the batter is dry at the top, flip over the roti. Repeat after 2-3 minutes.

  5. After the third flip, start pressing down the edges of the roti with the spatula, turning the roti over every 1-2 minutes.

  6. On the fourth or fifth flip you will notice the roti puffing up at the edges - continue pressing edges down and flipping over every 1-2 minutes.
